since you are working without authorization as a student, it could affect your chances of adjusting status in the US. time will tell. I ume you and your wife are filing together, so it would be pretty hard to hide. even if they turned down your I-485, you would just have to go back to get your immigrant visa to return. very inconvenient, but not the end of the world. far as the tax forms and the I-864 are concerned you should be fine if her most recent forms show she earns enough.
